Bakoula or bakkoula a kind of spicy lettuce made from mauve originally, which is often prepared during the spring season because it is found in abundance in Morocco but also in Algeria! A delicious salad that is served as a hot or cold starter (just like zaalouk, peppers chakchouka) and can be eaten with homemade bread! I know yesterday the summer season started for our greatest happiness, but the spinach are consumed from April to November and therefore why deprive yourself! In addition to home we love to eat during the month of Ramadan (good for intestinal transit)!
Ingredients:
1 good spinach bunch (about 500 g)4 crushed garlic clovesone small bowl of chopped parsley and coriander1 teaspoon of paprika (sweet pepper)1 teaspoon of cuminSaltHot pepper or harissa according to taste3 tablespoons olive oil2 tablespoons lemon juiceSlices of candied lemon peelSome green or purple olives
Preparation:
1.Wash thoroughly and chop the spinach. Mince finely the cloves of garlic.2.In a skillet over medium heat put olive oil, once warm add from underneath the cloves of garlic, chopped spinach, spices and half of parsley and coriander mix well.3.Sprinkle with lemon juice and cook while stirring occasionally until completely evaporated.4.When the water is evaporated add the remaining parsley and cilantro then extinguish the heat.5.During the presentation, decorate with slices of candied lemon peel and green olives.
Serve warm or cold spinach salad with batbout bread.
