An easy healthy enchilada recipe -Enchiladas chicken, pepper, mozzarella
Typical of Mexican cuisine, these enchiladas are relatively simple and quick to prepare. The principle is to garnish and roll tortillas (wheat or corn cakes) traditionally with beef or chicken, cover them with a tomato sauce and grated cheese and bake in the oven. Here, we chose a garnish made from chicken fillet, onions, peppers and mozzarella, an easy healthy enchilada recipe & a real delight to enjoy with family or friends for a moment of escape and conviviality!
Ingredients for 4 persons
200 g chicken breast1 onion2 handles of slices of peppers of 3 colors (frozen)Salt and pepper1/2 teaspoon of turmeric1/2 teaspoon of curryOlive oil4 wheat tortillas10 cl of tomato coulis1/2 spoon of dried oregano1 ball of mozzarella
PREPARATION for this easy healthy enchilada recipe
1.Fry the sliced onion in slices with the pepper in a drizzle of olive oil over low heat, season with salt and pepper. They should be well cooked without staining. Add a little water if necessary during cooking.
2.Cut the chicken breast into slices, add salt, pepper, turmeric, curry, oregano. Mix well and keep cool for at least 30 minutes. Fried in a tablespoon of olive oil.
3. Take a slice of wheat (tortilla) spread the pepper-onion mixture and a few slices of chicken. Sprinkle with grated mozzarella, close again. Renew this operation for other patties and arrange them in a lightly greased baking dish, otherwise it will stick a little (I forgot to do it!) Cover with grated tomato sauce and grated mozzarella, bake for gratin for 10 to 15 minutes in 180 ° C.
