Healthy chicken broth – An easy healthy chicken recipes for two
Cubic broths are often very salty and contain mostly chemical flavoring agents such as sodium monoglutamate, which, consumed in quantity, can cause allergies (Chinese restaurant syndrome). So we offer two very simple recipes of broths that we can freeze in small amounts well tared, and use as a sauce stock, or to make different soups.
IngredientsNumber of people: 2300g of chicken legs and wings, or a cut chicken of 2kg1 large onions, including 1 pique of 3 cloves40 g of carrots40 g of turnips50 g leeks1 large bouquet garni (parsley, celery 2 bay leaves)2 l of water1 tbsp. coffee peppercorns
Method of preparation
1. Pour 3 to 4 l of water in a large Dutch oven and bring to a boil; add the chicken pieces; remove them as soon as the flesh changes color (1 to 2 minutes). Discard the water, rinse the pot, fill it again with 4 liters of cold unsalted water and heat over medium heat.
2. Remove the skin from the chicken pieces; dip them in the water with the vegetables: onions, carrots, turnips and leeks, previously peeled and washed; add the bouquet garni.
3. Bring to a boil, then reduce the heat; skim, pepper and simmer for at least 2 hours 30 minutes.
4. Remove the poultry and vegetables with a slotted spoon, then pass the broth through a Chinese, collecting it in a clean, heat-resistant dish. Cover and let cool completely.
5. With the broth cold, refrigerate for 3-4 hours to freeze fat. Degrease then carefully, using a spoon.
6. Transfer the broth into food plastic containers of various sizes (25 and 50 cl); seal, label and date, then freeze.
Do not store broth for more than six months in the freezer.
Note:These broths are not salty to better adapt to their different functions.
Variant:Healthy beef broth. Since beef is fatter than chicken, it needs to be reduced. Replace the chicken with 750 g of scoter or beef chuck and 750 g of walnuts, cut into pieces. Proceed as for chicken broth, except of course for the skin removal operation, which is not necessary.
