Super brown rice
Ingredients
1 cup instant brown rice1/2 c. dried parsley1/4 c. ground black pepper1 C. unsalted butter1/2 c. lemon juice1 cup (+/-) low sodium chicken broth
Preparation steps
1. Combine rice, parsley and pepper in a microwaveable bowl.2. Place the butter and lemon juice in a measuring cup and add enough chicken broth to reach 1 cup of liquid. Pour into the rice bowl and cover the dish; microwave until rice is tender and absorbed, about 7 minutes.3. Remove the lid and let stand 5 minutes before serving
Brown rice with mushrooms and tofu
Ingredients2 tbsp. oil soup1 medium onion2 small red peppers cut in half, with the seeds2 tbsp. soup of soy sauce1 C. brown sugar1 C. coffee ketchup1/2 c. salt350 g brown rice already cookeda dozen beautiful mushrooms cut into slices200 g tofu baked, cut into thin slices150 g frozen or fresh peas, vegetables to decorate (bamboo shoots, cucumber, here avocado and red peppers)
Preparation:1. In a blender, reduce the onion and peppers to a slurry, adding a little water if necessary.
2. Heat the oil in a wok. Add the onion and chilli porridge and cook for about 4 minutes.
3. Mix the soy sauce, brown sugar and ketchup together, add to the wok and cook another 1 minute.
4. Add the rice and stir well until completely coated.
5. Add mushrooms, tofu and salt and cook, stirring gently until mushrooms are softened and tofu warm.
6. Add peas and cook until thawed and hot.
7. Check the seasoning. Put on a serving platter and decorate.
This dish contains only a minimum of fat. The water rendered by the mushrooms prevents the rice from attaching.
Baked tofu is obtained by cutting one pound of extra-firm tofu into one-centimeter slices, coating them with soy sauce and, after marinating for about ten minutes, bake on a baking sheet. well oiled at 190 ° C, 30-35 minutes, turning the pieces gently once, until the tofu is golden brown on the outside and tender inside.
