Crunchy wheat salad with apple

PREPARATION

Melt the butter in a heavy saucepan and fry the onion without browning. Add the rice and let it come back until translucent.4. Pour the white wine, stir and wait for the liquid to evaporate. Add hot broth, just enough so that the rice is just covered. Cook over medium heat, uncovered, stirring occasionally. When the broth is absorbed, repeat the operation until the broth is gone.5. Remove the pan from the heat, add the diced gorgonzola, apple cubes and nuts. Stir, cover the time the cheese melts and then serve immediately with chopped chives sprinkled on top and a pepper mill turn.
