For doughBring the water to a boil. Then add the wheat flour and mix quickly to obtain a homogeneous paste. Add the potato starch and mix again. Knead the dough once. Add the cuttlefish ink. Knead again.
To make the ravioli, form a 1 cm wide sausage with the dough. Then take a piece of the size of half the inch and spread it in a round as thinly as possible. Then add the same amount of stuffing and bend the ravioli. For simple folding, close the dough on itself to form a half-moon, then bring the two ends back on themselves. Place the ravioli on a previously prepared dish with a parchment paper and steam for 5 minutes.
