In a saucepan, heat the blueberry pulp, water, honey and sugar, then bring the mixture to 114 ° C.
At the same time, start raising the whites to the beater at low speed. When the blueberry syrup has reached 114 ° C, pour it gently into the egg whites. Increase the speed of the beater. The marshmallow will rise and then cool down.
When the mixture has cooled to 40 ° C, pour the marshmallow paste into a large dish previously sprinkled with the starch mixture. Smooth the dough and allow it to cool and harden for about 3 hours at room temperature.
